“Foodies” are in for a real treat when staying at the Villa thanks to the combined efforts of Jenny Izaguirre, Director of Food & Beverage, Chef Manuel and his able staff.
Jenny joined the staff in September 2017 as the Director of Food and Beverage for both Dunbar Rock and Clark’s Cay. In this capacity, she leads all team efforts in the kitchen, bar and serving areas. Born and raised in Honduras, she had spent the past 15 years out of the country pursuing an education (she has an Associates Degree in Culinary Arts and Bachelors Degree in Hospitality Management from the Culinary Institute of America) and gaining experience, including managing restaurants and F&B responsibilities at several Four Seasons resort properties.
How were we able to lure Jenny to Guanaja? In her own words,
“Very few times in our lives are we presented, with perfect timing, such an amazing opportunity to make an impact, where we came from. I have been away from Honduras for 15 years, and I have been busy not only exploring the different cuisines of North America, but the world. Fueled by my passion for food, hospitality and different cultures, I bring an enthusiasm to expand our team’s minds, just as mine has been for the past 15 years.”
We are equally lucky to have on hand Chef Manuelito. He started his professional career at the ripe age of 17, working in the kitchens of sweat shops in San Pedro Sula. Working and studying, he got a degree in Industrial Machinery. He quickly rose through the ranks, out of the kitchen and left to work at the Gran Hotel Sula, as a Pastry apprentice. After debating, whether he should stay in the kitchen versus serving tables, he understood the value of a long career learning in every kitchen he could. He rose through the ranks to Sous Chef and was with the company for 10 years. He, then was presented with the opportunity to travel and work in Spain. However, two weeks before he was to leave, he chose to stay because, the pain of leaving his little sons was too great. Chef Manuel, then worked in several well-known hotels in San Pedro Sula, until one day he chose to open his own catering company. It was three years ago when an old colleague from his Gran Hotel Sula days reached out, asking him to come to Guanaja. He worked at the Hotel Giralda as their Chef for a year and a half until he found a new home, here at Dunbar Rock. We are lucky to have had Chef Manuelito as part of our family now for over a year, preparing a variety of dishes that meld local flavors and dishes with more continental classics. He is always finding a new way to dazzle our guests.
Meals include breakfast, lunch and dinner with a snack provided around the cocktail hour. There is one entree prepared for each meal, announced on a blackboard in the dining area. If what you see is not for you, just let the staff know and Chef will create an alternative!
Breakfast is served around 7:30. Fresh juice, fresh fruit, eggs and bacon or sausage are always on the menu, and we find most of our guests want to eat breakfast “local” style with tortillas, beans, Chimol (pico de gallo) and hot pepper sauce. Cereal and toast are also available for those who arise earlier or who just want a light breakfast.
Lunch is served whenever the morning dive boats return, the late afternoon snack after the return of the afternoon boat dive, and dinner generally around 6:30 – 7:00.
Provisioning in a remote location such as ours can be a bit of a challenge and therefor requires a good deal of advanced planning. We therefore query all of our guests for information on food allergies and dietary restrictions prior to their arrival.

The Premium Bar Package includes all specialty drinks, top shelf, call and local liquor, beer, juice, soft drinks, house wine, and bottled water.
The Standard Bar PackagePurchase the Standard Bar Package at the time of reservation at a discounted $150.00 per person or pay $180.00 including tax if purchased once you are on property. The Standard Bar Package includes our very tasty local beer, house wine, well liquor, juice and soft drinks. Well liquor is vodka, rum, tequila and whiskey. (Specialty drinks, call liquors, and bottled water are only included in the Premium Liquor package.)
